This nutritious stir-fry recipe does require a bit of TLC but when seasoned properly and paired with an intensely flavorful peanut sauce, you’ll be wondering why you ever ordered takeout.

Enjoy this recipe as a main dish or combine it with one of the following dishes as a great accompaniment:

1. Serve over quinoa or farro.

2. Roll in a high-protein wrap.

3. Chop leftovers and use to make a “fried” brown rice by stir-frying rice and leftovers in 2 tsp of olive oil.

4. Toss over soba (buckwheat) noodles.

5. Slice leftovers and use in an omelet.

Ingredients

  • 1 lb top sirloin, cut into 1½-inch strips
  • 6 tbsp Asian Peanut Sauce (ingredients below)
  • 2 cups water
  • 1 cup quinoa
  • 1 tbsp canola oil
  • 1/2 head broccoli, cut into bite-size florets
  • 1 red bell pepper, cut into 1-inch wide strips
  • 1 cup snow peas
  • 1/2 cup light coconut milk
  • 3/4 cup creamy peanut butter
  • 3 tbsp reduced-sodium soy sauce
  • 3 tbsp fresh lime juice
  • 2 tbsp chopped shallots
  • 1 garlic clove, chopped
  • 1 tbsp brown sugar
  • 2 tbsp water, plus more if needed

Directions

  1. In a large bowl, toss beef with 4 tbsp of Asian Peanut Sauce. Cover and refrigerate for at least 30 minutes.
  2. In a medium pot, bring water to a boil. Stir in quinoa and reduce heat to medium-low. Cover and simmer, stirring occasionally, until liquid is absorbed and grains are tender, about 15 minutes. Transfer quinoa to a large bowl and let cool slightly.
  3. Heat oil in a large wok or skillet over medium heat. Add beef and cook until browned on all sides, about 8 minutes. Discard leftover marinade.
  4. Add broccoli, bell pepper, and snow peas and cook, stirring occasionally, until vegetables start to soften, about 8 minutes.
  5. Add remaining 2 tbsp of Asian Peanut Sauce and cook, stirring frequently, until heated through, about 2 minutes.
  6. FOR ASIAN PEANUT SAUCE: In a blender or food processor, add coconut milk, peanut butter, soy sauce, lime juice, shallots, garlic, and brown sugar. Blend until smooth. Add water to achieve desired thickness.
