Cedar Plank Salmon Servings: 2
You'll need
  • For The Salmon:
  • 2 6-oz salmon fillets, skin off
  • 1 tsp olive oil
  • Kosher salt, to taste
  • Pepper, to taste
  • For The Chipotle Ricotta:
  • 1 tbsp chipotle in adobo sauce
  • 2 oz ricotta cheese
  • Salt and pepper, to taste
  • For The Citrus Avocado Salsa:
  • 1 tbsp orange juice
  • 1 tbsp lemon juice
  • 1/2 avocado, diced
  • 1 tbsp diced tomato
  • 1 tbsp diced yellow onion
  • 1 tbsp chopped cilantro
  • 1 tbsp chopped mint
  • Salt and pepper, to taste
Directions 
1. Salmon: Preheat grill to medium-high heat. Rub salmon fillets with oil and season with salt and pepper. Lay salmon on a cedar plank. Place plank on the center of the grill and cover. Cook for 10 minutes, or until internal temperature reaches 120. Serve with chipotle ricotta and citrus avocado salsa.
2. Chipotle Ricotta: In a blender, puree the chipotle until smooth. Mix in ricotta, salt, and pepper.
3. Citrus Avocado Salsa: Mix all ingredients gently.
