• 1 cup fresh basil
  • 3 cloves garlic
  • ½ cup chopped walnuts
  • ¼ cup grated Parmesan cheese
  • ¼ cup olive oil
  • 1⁄3 cup water
  • 1 lb penne pasta
  • 2 cups chopped raw zucchini


  1. Combine the first six ingredients in a blender or food processor and blend until smooth. Add more water if needed to obtain a creamy consistency.
  2. Boil penne according to package directions. Drain.
  3. Toss penne with pesto sauce. Top with zucchini, tomato and a few basil leaves.
