Chef’s Tip: If possible, look for cold smoked salmon fillets, which are meatier than the standard thin-sliced supermarket variety. But either is a convenient source of muscle-building protein and mega-healthy omega-3 fats.

Ingredients

  • 1 cup frozen peas
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped chives
  • pinch of salt
  • 1/3 cup sour cream
  • 1 tbsp prepared horseradish
  • 2 tsp black pepper
  • 2 tsp white wine vinegar
  • 4 Irish soda-bun halves or other bread/cracker
  • 4 oz smoked salmon

Directions

  1. Prepare peas according to package directions; drain.
  2. Mash peas in a bowl with lemon juice, chives, and salt. In a separate bowl, stir together sour cream, horseradish, vinegar, and black pepper.
  3. Spread pea mash on each bun half. Top each bun with equal amounts of smoked salmon and horseradish cream.
