Ingredients

  • 3 lbs Japanese Eggplant
  • 1 cup Blond Miso
  • 3/4 cup Cooking Sake
  • 3/4 cup Sweet Rice Wine Mirin
  • 2/3 cup Sambal Oelek
  • 3/4 cup Sugar
  • 8 10" Skewers

Directions

  1. Spicy Miso Procedure: Place all ingredients in a medium size saucepot over medium low heat. Bring to a boil while whisking continuously. Once boiling, reduce to low heat and let it simmer for half an hour until it reduces 2/3 of the volume
  2. Eggplant Procedure: Cut the Japanese eggplant 1/2-inch-wide rounds. Place 3 pieces of eggplant on each skewer.
  3. Final Procedure: In medium sized nonstick saute pan add 2 tablespoons of olive oil, place 3 eggplant skewers for 2 minutes on each side over medium high heat. Remove from sautee pan and place on cutting board. Lightly brush with miso and finish in the broiler for 2 minutes until it is slightly charred. Then garnish with sesame seed and place it in on a serving plate.
