Italian Turkey Meatloaf AKA "Mighty Man Meatloaf"

Ingredients: 
2½ lbs extra-lean ground turkey
½ cup zucchini (optional)
½ cup broccoli stems (optional)
1 pkg McCormick meatloaf seasoning pack
4 egg whites
2 cups rolled oats

Equipment:

  • Loaf pan

Instructions:

  1. Preheat oven to 425°. Put all ingredients together in a large bowl and mix well with your hands.
  2. Rub two loaf pans, or, preferably, silicone pans, liberally with olive oil. Fill pans with meatloaf mixture and press down firmly. Place pans on a baking sheet and cook for approximately 35 to 45 minutes or until food reaches 135°, as measured with a meat thermometer.
  3. Remove from oven and let sit for at least 20 to 30 minutes or until cooled. Turn out onto a cutting board and slice into eight thick slices.
