Pine nuts are surprisingly sweet when cooked, and provide oleic acid, which lowers cholesterol, and pinolenic acid, which triggers the release of hunger-suppressing hormones. Mix this dessert up in minutes and sleep soundly with a full feeling in your stomach and the knowledge that you haven’t sabotaged your diet.

You'll need
  • 1 oz Pine Nuts
  • 1 cup Cottage Cheese
  • 1 tbsp Lemon Juice
  • 1 tbsp Coconut Oil
  • Stevia to taste
  • Cinnamon (optional)

Pine nuts are high in vitamin E, a potent antioxidant that maintains the integrity of cell membranes in the skin. 

1. Set a skillet over medium heat and pour in the pine nuts. Stir occasionally.
2. Meanwhile, scoop the cottage cheese into a bowl and mix in the lemon juice and coconut oil.
3. When the nuts turn a toasted color and you see (and smell) their oils releasing, take them out and pour them onto the cottage cheese mixture.
4. Blend everything together with a packet of Stevia and serve.
5. Add cinnamon, if desired.
