Ingredients

  • 1 ¼ cups steel-cut oats
  • 1 tsp cinnamon
  • ¾ cup canned pure pumpkin
  • 2 scoops chocolate whey protein
  • ⅓ cup chopped nuts
  • 2 cups low-fat plain Greek yogurt

Directions

  1. In a medium-size saucepan, bring oats, cinnamon, a pinch of salt, and 31/2 cups water to a simmer. Immediately turn off heat, cover, and let soak overnight.
  2. In the morning, stir in an additional 1⁄3 cup water, pumpkin, whey protein, and nuts. Heat on medium-low until warmed through, stirring often. Serve oatmeal topped with yogurt.
