Ingredients: 
1/4 lb  ground turkey
4   small tomatoes, chopped
4  green onions, chopped
4  green peppers, chopped
4 tbsp  lemon juice
salt and pepper to taste
12  egg whites

Instructions:

  1. Brown the turkey in a skillet over medium heat.
  2. Chop the vegetables while it cooks.
  3. Then place chopped vegetables into a bowl and mix with the lemon juice, salt, and pepper.
  4. When the turkey is cooked, layer egg whites over it.
  5. Cook until eggs are white and serve with salsa, if desired.
