  • 9 six-oz boneless, skinless chicken breasts, pounded out
  • 3 cups cherry tomatoes, halved
  • 3 tbsp extra-virgin olive oil
  • 3 tbsp balsamic vinegar
  • 3 tbsp salt
  • 3 tbsp pepper


  1. Preheat oven to 300°. Place chicken breasts and halved cherry tomatoes in a baking pan. Drizzle olive oil and balsamic vinegar evenly on chicken and tomatoes, and sprinkle salt and pepper evenly.
  2. Bake for about 20 to 30 minutes or until chicken is cooked to your liking.
