Ingredients

  • 1 (8 oz) frozen fish fillet (cod, swai, pollock, or haddock)
  • ½ packet taco seasoning
  • 2 whole-wheat tortillas
  • 1 cup broccoli slaw, coleslaw, or shredded cabbage
  • ½ cup pineapple chunks, canned in juice, drained
  • ½ cup chunky salsa

Directions

  1. Place fish in a pan with a small amount of water and sprinkle on taco seasoning. Cover and cook on medium heat until done, about 8 to 10 minutes. Cut fish into small pieces.
  2. Place fish pieces in the middle of tortillas, layer on broccoli slaw and pineapple, and top with salsa.
