Traditional mac and cheese is one of the number one winter comfort foods. Something about cheese and pasta just takes us back to childhood.

Typically, this dish is used for special occasions and cheat days only. But what if we told you that it can be powered up as a healthy dish to add to your weekly rotation? You just have to add Isopure Unflavored Zero Carb Protein Powder (get it here).

Ingredients

  • 1 tbsp butter, salted
  • ½ cup skim milk (or milk alternative of choice)
  • 2 cups water
  • 1 box white cheddar Banza chickpea mac and cheese, unprepared
  • 1 scoop Isopure Zero Carb Protein Powder

Directions

  1. Empty entire box of chickpea pasta into the instant pot (not the cheese packet, just the pasta)
  2. Add 2 cups of water and 1 tbsp of butter and stir to combine all.
  3. Seal lid on your Instant Pot. Make sure all safety measures are in place on your pot as well.
  4. This part may differ between different models of your Instant Pot, but to cook this pasta you want to set the pot to cook on manual or the pressure cook setting on high for 3 minutes. (If you are a new Instant Pot user, note it takes a few minutes for the pot to reach the proper pressure before the timer kicks on)
  5. In a separate bowl, while pasta is cooking, mix the cheese packet from the box of pasta with 1 scoop protein and half cup of milk. Mix well. Set aside.
  6. Once the timer goes off you must release the pressure on the top before safely removing the lid.
  7. While the pasta is hot and in the pot, mix in your cheese sauce. Serve immediately.
